To make the Citrus Syrup (makes 750ml)

300ml fresh clementine juice
200ml recently pressed lemon juice
500g fine sugar

Ingredients for the Drink (makes 850ml, to serve 10)

150ml peach schnapps
200ml clementine cordial (see above)
Whole cranberries, to garnish
Mandarin essential oil, to finish

Method

Making the Cordial: Combine the listed components inside a pan, heat until it reaches a simmer, agitating so the sugar melts. Next, remove from the burner and leave to cool down completely. Pour into an sealable bottle, close it and refrigerate it chilled, where it will keep for up to one month.

Preparing the Batch Mix: Combine the specified spirits and syrup into one sizeable container, let it rest for 60 minutes, then strain , ideally through cheesecloth, making it fully clarified.

When ready to serve: Pour 85ml of the cocktail base into your stirring glass containing ice, and agitate gently for about 60 seconds to cool it down. Filter into a cold coupe glass or a similar vessel, garnish with a few cranberries adding the final touch by giving it a quick spritz of the essential oil over the drink.
